Tequila is produced exclusively from blue Weber agave in designated regions of Mexico, primarily Jalisco. Blanco tequila (unaged or rested briefly in stainless steel) is the most agave-forward expression — fresh, vegetal, with citrus and pepper notes. Reposado is aged two to twelve months in oak and picks up vanilla and caramel while retaining agave character. Añejo, aged one to three years, becomes more whiskey-like with deep oak, chocolate, and dried fruit notes. Mezcal, made from various agave species in different Mexican states (primarily Oaxaca), is characterized by smoke from the roasting of the piñas, along with mineral and herbal complexity. Always look for 100% agave on the label — 'mixto' tequila contains additives.

The Paloma: Mexico's Favorite Cocktail

In Mexico, the Paloma outsells the Margarita, and once you have had a properly made version, the reason is obvious. Combine 1.5 oz blanco tequila, 2 oz fresh grapefruit juice, 0.5 oz fresh lime juice, and a small pinch of salt in a highball glass over ice. Top with grapefruit or plain soda water and stir gently. The bittersweet grapefruit and the earthy agave spirit are a natural pair, and the salt (which can be delivered via a half-salted rim of Tajín) amplifies both flavors. A simplified version uses Jarritos Toronja (Mexican grapefruit soda) in place of fresh juice and soda, producing a slightly sweeter but still excellent drink.

Tommy's Margarita

Invented by Julio Bermejo at Tommy's Mexican Restaurant in San Francisco in the 1990s, Tommy's Margarita strips the classic Margarita down to its essential agave character by replacing triple sec with agave nectar. The formula: 2 oz 100% agave blanco tequila, 1 oz fresh lime juice, 0.5 oz agave nectar (not agave syrup, which is much sweeter). Shake hard with ice and strain over fresh ice in a rocks glass with a half-salted rim. The absence of triple sec removes the orange sweetness and allows the tequila's character to emerge fully — it is a more austere, spirit-focused drink that showcases what good tequila actually tastes like. It is now recognized as an IBA Official Cocktail.

Oaxacan Old Fashioned and Mezcal Cocktails

The Oaxacan Old Fashioned, created by Phil Ward at Death & Co in New York, is one of the most influential modern cocktails. Combine 1.5 oz reposado tequila, 0.5 oz mezcal, 1 barspoon agave nectar, and 2 dashes each of Angostura and mole bitters in a mixing glass over ice. Stir and strain into a rocks glass over a large ice cube, and express a flamed orange peel over the top. The combination of tequila's agave sweetness and mezcal's smoke, seasoned with chocolate and spice bitters, is one of the great flavor discoveries in contemporary cocktail making. A Mezcal Negroni — substituting mezcal for gin in the equal-parts template — is equally compelling.

Tequila Sunrise and Spicy Cocktails

The Tequila Sunrise is one of the most visually iconic cocktails: fill a tall glass with ice, pour in 2 oz tequila, top with orange juice, then slowly pour 0.5 oz grenadine over the back of a spoon so it sinks to the bottom, creating the orange-to-red gradient that resembles a sunrise. Use real pomegranate grenadine (Liber & Co or homemade), not the artificially colored corn syrup version that appears in most commercial applications. For a Spicy Margarita — one of the most requested variations — muddle two to three thin slices of jalapeño in the shaker before adding tequila, lime, triple sec, and ice. Strain over a Tajín-rimmed glass. You can also use a few drops of hot sauce for a more controllable heat level.
